Sustainable menu development course

What is it?

A one day course on Monday 16th March 2026, from 9am to 4:30pm in Kirkcaldy, during which participants will learn what they need to confidently add more sustainable, plant-based options to their existing menus.

Who is it for?

Representatives from cafes, restaurants, catering businesses, and individual food workers in Fife who want to:

  • better understand the environmental impact of the food they serve;
  • expand their menu options to include people who prefer plant-based options;
  • take part in practical training to increase their knowledge of preparing plant-based dishes;
  • share ideas and get expert advice on improvements to their existing menu.

What does it cost?

The course is free for 10 participants from different organisations, thanks to funding from the FCCAN Seed & Development fund.

What will be covered?

The course content will be tailored for the participants who register in advance. We will cover topics like:

  • How to make appealing and inclusive plant-based dishes, ingredients and recipes.
  • Adapting your signature dishes for different audiences and needs.
  • Efficient, low-waste and cost-effective menu design.
  • Nutrition and allergy awareness in plant-based cooking.
  • Prioritising local, seasonal, sustainable ingredients.

We’ll discuss participants’ current menus as a group, and workshop concrete, practical suggestions for improvements.

We will also include cooking demonstrations from local plant-based chefs, and a participants will take part in a hands-on cooking session with locally grown oyster mushrooms.

Lunch is included in the course!

Then what?

Participants who use what they learned to make changes to their menus over the subsequent few months will be included in a promotional showcase event, will have the opportunity to advertise their food at Fife VegFest, and will be supported as destinations for VegFest Social events.

Participants can arrange follow-on support through Vegan Fife and/or Greener Kirkcaldy if needed.
